Both non-Indian and Indian airlines are experimenting with inflight menus to offer their customers an exclusive dining experience on board. The national carrier of India has started serving typical Indian food and chai (tea) in a traditional way on its domestic flights in the country.

On February 1, Air India introduced Indian thali meals and kulhad masala chai (masala tea in clay pots) on Delhi-Mumbai-Delhi flights. Passengers have been enjoying Indian thalis at lunch and dinner on this route. This traditional inflight food service will be extended on to other flights across Indian cities.

Kulhad chai (tea in earthen pots) is not unknown to Indians. It has been unique to train travel in India for decades. Sipping tea from clay pots is a typical Indian experience, which is now available on Air India flights in India. Unlike regular tea, masala chai is made using some special ingredients. Having it in kulhad is an altogether different experience.

The new Indian thali on Air India flights between Delhi and Mumbai has seven items including rice, dal, roti, bread, salad, yoghurt, vegetables and curry (paneer or chicken). All dishes on a thali are heated separately and plated unlike regular inflight meals. Air India has circulated instructions on how to plate the thali and how to prepare masala chai to its cabin crew.

Air India’s pre-order meal service has been rolled out for premium passengers on select flights between the US and India. The exclusive facility to pre-order meals is currently available on Air India’s flights between New York and Delhi, Chicago and Delhi.

This service for premium class travelers came into being under the new initiative, “Order to Chef,” by Air India. Using the “Order to Chef” program, the First and Business class passengers can select and order their favorite dishes from Air India’s inflight menus designed by a team of eminent chefs including Chef Rajan Loomba from The Ahok Hotels in New Delhi.

A dedicated “Order to Chef” unit has been set up in New Delhi to contact the airline’s premium class travelers before their scheduled departure and seek their onboard meal choices for the flights to and from New York as well as Chicago. Air India’s pre-order meal service is also available on daily Delhi-London flights.

Passengers are served pre-ordered meals from Air India’s inflight menus, according to their dietary and culinary preferences. The inflight menu served on the US to India routes offers the best of Indian food from different regional cuisines, and a variety of continental dishes as well as seafood delicacies.

At present, two major meals and one high tea are served on Air India’s US to India flights between New York and New Delhi, Chicago and New Delhi. There are masala dosa, vegetable upma, Amritsari Chhole Poori, Panir Makhanwala, Sahi Panir, Pepper Chicken, Pakoda Kadhi, Prawn Malai Curry, Malai Kofta, Gajar Ka Halwa, Semiya Malai, etc. apart from a selection of beverages and snacks on Air India’s inflight menu.

Air India’s “Order to Chef” service is the airline’s collaboration with its catering partners: TajStats and SkyGourmet. Feedback about this service has reportedly been positive till date. Air India’s pre-order meal service under the “Order to Chef” program will be extended to San Francisco to Delhi flights and other international routes shortly.

United Airlines flights in Economy Class seem to be better than the same flights by other airlines. United Airlines brings back free meals and drinks to its Economy flights on international routes. Moreover, an open bar to serve free beer and wine in Economy Class is like icing on the cake.

Economy travelers will be enjoying free booze on several routes to Asia including USA to India, and some Latin American routes. United Airlines has already started serving free wine and beer on some of its long-haul transpacific and transatlantic flights except international flights on some short-haul routes which are operated for domestic travel. However, a surcharge is still levied on cocktails on all flights and on all routes.

Of late, United Airlines rolled out a seasonal craft beer on its flights worldwide and at its signature United Club lounges in the U.S. The beer ‘Samuel Adams Winter Lager’ is in the selection of beverages on board. Unlike regular beer, this wheat winter lager is bold, rich and spicy with ground cinnamon, ginger and orange peel.

“We do always listen to our customers and strive to make their flights more enjoyable,” said Jimmy Samartzis, United’s Vice President for food services and United Clubs. “With our fingers on the pulse of customers to know their likes and choices, we deliver restaurant-like meals cooked with the best ingredients, and serve complimentary alcoholic drinks like seasonal beer.”

Non-alcoholic passengers need not be disappointed. There is something special for them on all United Airlines flights. Since December 1, 2015, the airline has been serving Illy Coffee on all international flights. United Airlines partnered with the Italian Coffee brand to treat all passengers to free coffee on all international routes including USA to India. The same coffee will be served at all United Club lounges in 2016.

In addition to free beer and free coffee on all Economy flights across its international network, United Airlines has revised the menu of premium cabin meals and snacks for the flights departing San Jose, Bogota, Santo Domingo, and Port of Spain.

The launch of Air India’s nonstop flight from New Delhi to San Francisco is some 18 days away. San Francisco to New Delhi is the longest route in Air India’s global network. The national airline of India released a brief about inflight dining on the new route, adding to the excitement about the upcoming new service.

Air India has collaborated with Chef Rajan Loomba, an ambassador of the Indian cuisine, to design menus and meals for flights between Delhi and San Francisco. Rajan Loomba is Executive Chef of The Ashok in New Delhi, India. He gave a presentation of the new menu to Ashwani Lohani, CMD of Air India. He shared with the senior professionals of Air India the details of the inflight menus and meals including the best of Indian cuisine.

According to Chef Rajan Loomba, the food to be served on board during New Delhi flights to San Francisco and San Francisco flights to New Delhi would be light for the stomach and delicious for all taste buds. It is to be a wholesome gastronomic experience for guests with different palates. Air India’s new inflight menu for the new route includes continental dishes in both vegetarian and non-vegetarian categories.

Variety is the mainstay of the menus to be served in Air India’s First and Business Class travel cabins, starting from December 2, 2015. Chef Rajan Loomba has designed meals for the First and Business Class passengers, keeping in view the cultural and demographic diversity of India. The airline’s premium passengers traveling between San Francisco and New Delhi with be treated to an exclusive selection of food along with the best wines.

Apart from highly palatable meals, amenity kits with an Indian touch will be provided to all passengers on Air India’s first flight from New Delhi to San Francisco, scheduled on December 2, 2015. Amenity will contain only Khadi products. Kits will be provided on all international flights by Air India later on. The latest Hollywood and Bollywood movies from Air India’s array of inflight entertainment programs will be screened on San Francisco to New Delhi flights. TV shows, games and documentaries will be available too.

In the West Coast, San Francisco is home to a major percentage of the Indian diaspora. Many multinational corporations in the San Francisco Bay Area have their bases in India. Many entrepreneurs and tech professionals travel from the West Coast to India. Air India’s three weekly direct flights from San Francisco to New Delhi will give seamless access to India’s other IT hubs including Bengaluru, Hyderabad, Chennai, Kolkata and Chandigarh through domestic connectivity.

International airlines are trying every possible means to woo their customers on board. However, Lufthansa Airlines is a few steps ahead of other international airlines including the three above. With the latest news of its inflight meals service making rounds in the world of aviation, Lufthansa seems to have proven a dark horse in the race. The German airline has taken an initiative to offer ‘restaurant service’ in the Business Travel Class. Evidently, Lufthansa has a bigger fish to fry than other airlines.

You did not surely get an impression that Lufthansa is to convert the Business Travel Cabin into an inflight restaurant. What the airline is all set to do is revamp the way it serves meals to Business Class passengers during long-haul flights. Lufthansa’s inflight menu for Business Class flights on long-haul routes is given a makeover to give passengers an overwhelming feel of restaurant-like service.

According to the plan, Lufthansa’s flight attendants will adapt their ways of service towards catering to the Business Class fliers’ needs on board with more attention and efficiency as it is in world-class restaurants. The inflight meals service enhancement that Lufthansa refers to as ‘restaurant service’ is focused on giving welcome to passengers by their names, taking individual orders for the meals of their choice, setting tables with ceramic crockery and  serving them directly from the galley. Also, flight trolleys and trays will be replaced with service plates.

Lufthansa rolled out the restaurant-like meal service on A380 flights to New York in June and to Miami in July this year. It will soon be launched on Lufthansa’s A380 flights to Delhi, Houston, Miami, New York, Beijing, Los Angeles, San Francisco, Seoul, Singapore, Shanghai and Johannesburg. Business Class travelers on B747-400, B747-8 and A340 flights from Frankfurt and Munich to Asia and the Middle East will be treated to the same restaurant-like inflight dining experience from October 2015.

Around 4,500 flight attendants have been meticulously trained to deliver Lufthansa’s inflight meal services with restaurant-like attributes. According to aviation critics, it is Lufthansa’s “another important step towards becoming the first five-star airline in the Western hemisphere.”

ritish Airways has increased the number of routes from 6 to 21 for passengers to avail of the pre-order meal facility which was launched in December 2014. Now, British Airways’ passengers can pre-order their meal choices online 30 days before their scheduled travel dates on 21 routes from London Heathrow International Airport.

From today, those flying in in British Airways’ First Class, Club World and World Traveller Plus can select and order their meals in advance for flights from London to Las Vegas, Phoenix, Sao Paulo, Buenos Aires, Mexico City, Houston, San Diego, Austin, Dallas, Seattle, Vancouver, and Rio de Janeiro.

From March 1, the service will be available for British Airways’ flights to more nine destinations from London Heathrow – Denver, Boston, Atlanta, Chicago, Toronto, Montreal, Baltimore, Philadelphia and Calgary. The passengers to travel on these routes from London Heathrow can pre-order their meal preferences within 30 days of their confirmed flights.

British Airways’ inflight menus in the First and Club World are updated every month facilitating choice from three or four main dishes. The dishes on the menus in the World Traveller Plus are changed once in three months.

The pre-order meal service will be extended on to all of British Airways’ long-haul routes from London Heathrow and Gatwick by the end of 2015. To say in the words of Lynn McClelland, BA’s head of catering,
